Ingredients
- 3/4 cup shortening
- 1/2 cup brown sugar
- 1 egg
- 1 1/2 grated carrot
- 2 tablespoons lemon juice and rind
- 1 tablespoon water
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 1/4 cup flour

Preparation
Step 1
Preheat oven to 300°. Grease and flour a round mold. Mix all ingredients together and bake for 1 hour or until a toothpick comes out clean. Pretty with sweet peas in the center.
