  • 4 fillets of sole or other firm fish such as cod or flounder
  • ...................................
  • 1 cup all-purpose flour
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • ...................................
  • 2 eggs, beaten
  • 1/4 cup vegetable oil
  • 1 jar spaghetti sauce - your choice
  • 6 thin slices mozzarella cheese

Preparation

Step 1

Coat fillets with mixture of flour, salt and pepper on wax paper. Dip in beaten eggs in pie pan until coated; dip fillets in flour again until well coated.

Brown fillets, half at a time, in hot oil in large skillet until golden. Turn and brown on second side. Remove from skillet and keep warm.
