- Beat in small bowl:
- 3 eggs
- 3/4 cups water
- 3/4 cup flour
- pinch of salt

Step 1
Using a crepe pan add a small amount of butter and then drop about 2 or 3 tbsp. of batter in pan. You need to cook only on one side. If necessary, turn on other side for a few seconds. Repeat procedure until batter is finished. Should make about 10 manicotti shells. They should be almost paper thin.
Filling:
1 lb. Ricotta
2 eggs
2 or 3 tbsp. grated Romano cheese
parsley, salt and pepper to taste
Spread some Italian sauce on bottom of baking dish. Spread filling on each manicotti shell. Roll both sides up towards the middle. Place folded side down in baking dish. Spread a generous amount of sauce over top of each manicotti. Bake at 350 degrees for 1/2 hour. Let set for 15 minutes before serving.
