Ingredients

  • 1 1/2 lbs ground chuck
  • 2 cups cooked stuffing, roughly chopped
  • 1 lg egg, beaten
  • kosher salt and pepper
  • 1/4 cup orange marmalade
  • 1/4 cup whole-grain mustard
  • 10 oz baby arugula (6 cups)
  • 2 tbsp olive oil
  • 2 tbsp basalmic vinegar

Step 1

Heat oven to 400. In large bowl, combine beef, egg, 3/4 tsp salt and 1/2 tsp pepper. Transfer mixture to rimmed baking sheet and form into a 9 inch loaf (2 1/2 inches thick). Bake for 30 min. In small bowl, combine marmalade and mustard, spread on meatloaf and bake 15-20 min until cooked through, let rest 10 min before slicing. Divide arugula among plates, drizzle with oil and vinegar and serve with meatloaf.
