Ingredients

  • 4 strips bacon
  • 2 green peppers
  • 2 medium onions chopped
  • 2 cups cooked rice
  • 1 can (16 oz.) stewed tomatoes
  • 1 cup tomato sauce
  • 1 tablespoon tobasco sauce
  • 1 lb. cooked shrimp
  • Pepper to taste
  • 1 tablespoon Parmesan cheese

Preparation

Step 1

In a large skillet, fry bacon until crisp and remove to paper towel saving drippings in skillet. Brown pepper and onions in drippings. Add rice, tomatoes, tomato sauce, tobasco and crumbled bacon. Add cooked shrimp and pepper to taste.

Preheat oven to 325 degrees. Pour contents of skillet into greased 2 quart casserole. Sprinkle top with Parmesan cheese and bake 30 minutes.
