Tweaking my old original tzimmes for a not so sweet version, suitable for the autoimmune protocol.

Ingredients
- 2 TB extra virgin olive oil {or coconut oil}
- 2 sweet potatoes, chopped
- 1/2 yellow onion, chopped
- 1 lemon, juiced and zested
- 1/2 cup dried tart cherries
- 6 or 7 dried Calimyrna figs, sliced
- 1 tsp cinnamon
- 1 one-inch chunk fresh ginger, peeled and grated
- 1/2 tsp Real salt or Himalayan sea salt

Step 1
Preheat oven to 375° and coat the bottom of a casserole with oil.
Add potatoes, onion, zest, juice, cherries, and figs.
Cover and bake until potatoes are fork tender.
Carefully sprinkle with cinnamon, fresh grated ginger, and sea salt, give it a quick stir, and let bake another five minutes.
Serve immediately.
