Ingredients

  • 2 (7oz) cans whole green chiles, drained & large diced
  • 8 oz Monterey Jack cheese,shredded
  • 8 oz cheddar cheese, shredded
  • 3 eggs beaten
  • 1 (12 oz) can evaporated milk
  • 2 tbs flour
  • 1 can Mexican stewed tomatoes, blended
  • 1 small onion,diced

Preparation

Step 1

Preheat oven to 350
Spray an 8x8 baking dish with cooking spray

Lay 1/2 of chiles in bottom of dish
Sprinkle 1/2 of the cheddar and jack cheese
Repeat with the other 1/2 of the chiles
In a bowl mix together the eggs,milk, & flour and pour over the chiles
Bake in preheated oven for 25 minutes
Remove from oven and pour the tomatoe and onion mixture evenly over the top
Sprinkle the remaining cheese on top
Bake another 15 min
