Ingredients

  • Muffins
  • 1/2 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups whole wheat flour
  • 1/2 cup all purpose flour
  • 2 1/2 tsp baking soda
  • 2 cups buttermilk
  • 1 cup 100% Bran (Nabisco)
  • 1 cup boiling water
  • 2 cups All Bran cereal
  • 1/2 tsp salt
  • 1 cup walnuts, ground
  • 1 cup raisins
  • 1/2 cup wheat germ
  • Smear
  • 3/4 cups dark brown sugar
  • 1/3 cup plus 1 Tbsp shortening
  • 1 Tbsp honey
  • 1-2 Tbsp water

Preparation

Step 1

Cream margarine and sugar. Add eggs and beat well. Sift flours and baking soda together and add to creamed mixture, alternating with buttermilk. Mix well. Combine 100% bran with boiling water. Add to batter and stir in. Fold in All Bran, salt, raisins, and wheat germ. Combine smear ingredients and beat for two minutes. Smear the smear inside the muffin cups generously. Fill cups with batter and bake 360 degrees for 25 minutes.
