Garlic Linguine with Roasted Bell Peppers

Ingredients

  • 3/4 pound linguine
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/2 cup bottled roasted red bell
  • peppers, drained and chopped
  • 2 tablespoons grated Parmesan cheese

Preparation

Step 1

Cook pasta in boiling salted water 8 to 10 minutes or until pasta is al dente.
While pasta is cooking, heat oil in a
heavy nonstick skillet over medium-high
heat. Saute garlic and peppers 2 to 3
minutes. until hot.
Drain pasta and transfer to serving bowl.
Add peppers and garlic mixture.
Sprinkle with Parmesan. Season with salt and pepper to taste.
Toss before serving.
