Garlic-Rosemary Mayonnaise

This is a savory and delicious spread, perfect for beef sandwiches. I use it on Beef Dips as well. Just awesome!

Ingredients
- 1 egg yolk
- 2 teaspoons lemon juice
- 1 teaspoon coarse or Dijon mustard
- 1/4 teaspoon Kosher salt (possible more to taste)
- 1/8 teaspoon ground black pepper
- 1/2 cup canola oil
- 1/4 cup Olive Oil
- 2 cloves garlic, pressed or minced
- 1 teaspoon Rosemary, chopped

Preparation
Step 1
Combine the oils in a small bowl.
In a medium bowl, which together the Egg Yolk, Lemon Juice and Mustard. While continuing to whisk the mixture, slowly add some of the oil. Not a lot. Just a little bit and continue to whisk until it's combined.
Continue adding 'chunks' of the oil to the mixture while whisking. Each time, you can add a little more oil than the previous time.
Once all the oil is in, whisk for another 30 to 60 seconds. It will be a little runnier than normal mayommaise (cause it's warmer from all the whisking); this is ok.
Add the Garlic, Rosemary and Salt and Pepper and give one final mix.
Put into the refrigerator to set (about an hour). Then be prepared to be wowed.
