Ingredients
- Cornmeal topper:
- 1/2 C chopped onion
- 1 # ground beef
- 1 1/2 C whole kernel corn
- 1/2 C chopped ripe olives
- 1 clove garlic (or dried minced)
- 1 t salt
- dash pepper
- 1/2 C chopped green pepper
- 2- 8 oz. cans seasoned tomato sauce
- 1 T sugar
- 2-3 t chili powder
- 1 1/2 C shredded cheddar cheese
- green chilis (optional)
- 3/4 C yellow corn meal
- 2 C cold water
- 1/2 t salt
- 1 T butter

Preparation
Step 1
Cook onion and green pepper til tender. Add meat, brown lightly. Drain. Add next 8 ingredients. Simmer 20-25 minutes or til thick. Add cheese; stir til melted. Pour into 10 X 6 in baking dish. Cool thoroughly and freeze if desired.
To serve: Bake covered at 375 degrees 1 hr and 15 min. Add corn meal topper and bake additional 35-40 minutes or til hot through and top is browned.
Corn meal topper:
Stir corn meal and salt into cold water. Cook and stir til thick. Add butter; mix well. Spoon over meat mixture in narrow strips.
