Ingredients
- Frosting:
- 2 cups flour
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp baking soda
- 1 1/2 cup salad oil
- 2 cups sugar
- 4 eggs
- 1/2 cup butter
- 1 8oz pkg cream cheese
- 1 lb pkg confectioners sugar
- 1 tsp walnuts
- 1 cup walnuts

Step 1
Combine 1 1/2 cups salad oil, 2 cups sugar and mix well. Add one at a time 4 eggs mixing well after each addition. Gradually add dry ingredients, mixing well. Add 2 cups finely grated carrots. Mix well and turn into 3 8" cake pans that have been greased and lined. Bake at 350 for 50 - 60 minutes.
Icing: Combine 1/2 cup butter, one 8 oz pkg cream cheese and beat until light. While beating, add 1 lb confectioners sugar, 1 tsp walnuts and 1 cup chopped walnuts.
