Ingredients
- 1 cup rolled oats
- 1 can of pineapple bits
- 1/4 cup vegetable oil
- 2 eggs, lightly beaten
- 1 cup all purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 cup raisins

Step 1
Preheat oven to 350 degrees.
Drain the pineapple bits, reserving the juice. In a bowl, combine the rolled oats, pineapple juice, oil and beaten eggs. Let sit for 15 minutes.
In a large bowl, combine all dry ingredients, including raisins. Pour into the oat mixture and stir until just dampened. Add the pineapple bits, stirring as little as possible. Spoon batter into lightlly oiled muffin pans.
Bake for 20 minutes.
