Ingredients

  • Cake:
  • 1 box white cake mix
  • 1/3 cup light rum
  • 1/2 cup water
  • 1/4 cup vegetable oil
  • 4 eggs
  • 1 pkg instant coconut pudding
  • 1 cup coconut
  • Icing:
  • 1 pkg instant coconut cream pudding
  • 1/3 cup light rum
  • 8 oz crushed pineapple with juice
  • 8 oz cool whip

Preparation

Step 1

Cake:

Heat oven to 350 degrees.

Mix all cake ingredients adding coconut last. Beat 4 minutes and pour into greased and floured 9x13 pan. Bake 30 minutes and cool completely.

Icing:
Mix together first three ingredients. Fold in cool whip. Spread on cooled cake.

Notes:
Best when prepared several hours before eating.

This cake is very strong! Definitely NOT for kids.
