Ingredients

  • Filling:
  • 1 cup sugar
  • 1 tsp cinnamon
  • 4 Tbsp flour
  • Dash salt
  • 6-7 cups thinly sliced and pared 20 oz apples
  • 5-6 good sized pats of unsalted butter.
  • Crust:
  • 2 cups flour
  • 1 tsp salt
  • 3/4 cup shortening
  • 5-6 Tbsp iced water

Step 1

Preheat oven to 425 degrees.

Mix all filling ingredients except butter and set aside while making pie dough.

Combine shortening, salt and flour in Cuisinart and pulse for about 3 seconds, till crumbly in texture. Place in small bowl and sprinkle enough iced water over until dough sticks together….do not
overwork the dough. Shape into ball.

Divide pastry in half and roll out on lightly floured surface with light strokes from the center to edges. Roll in alternate directions to shape an even circle. Fold pastry in half and transfer carefully to pie plate. Turn apple mixture into pastry lined plate. Mound high in center and place pats of butter over topping. Roll out remaining crust and place over the top. Make slits in the top crust to vent. Fold edge of top crust over bottom and decoratively crimp. Place a strip of foil around the crimped edge to prevent the edges from burning. Remove the foil towards the last 15 minutes of baking.

Bake for 45-50 minutes till apples are tender and the crust is golden.
