Garlic Pepper Pork with Roasted Corn Relish

Ingredients
- 2 ears corn, husks and silk removed
- 2 jalapeño peppers
- 4 small vine-ripened tomatoes, chopped
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 4 teaspoons olive oil, divided
- 1 teaspoon sugar
- 1/2 teaspoon ground cumin
- 1 1/2 pounds HORMEL® ALWAYS TENDER® Original Flavor Pork Tenderloin, cut into 3/4-inch-thick slices
- 2 teaspoons freshly ground pepper
- 4 cloves garlic, minced
- Salt and freshly ground pepper, to taste

Step 1
Grease grill grate. Prepare grill for medium-high heat.
To make salsa, grill corn 10 to 12 minutes or until corn is cooked and lightly charred. Let stand 5 minutes or until cool enough to handle.
In medium bowl, stand 1 ear corn on its end; run knife down cob to remove kernels. Repeat with remaining ear of corn.
Grill jalapeños until softened and lightly charred. Remove and discard stems; chop jalapeños finely. Add to corn kernels. Add tomatoes, cilantro, lime juice, 2 teaspoons oil, sugar, cumin, salt and black pepper to taste; stir to combine. Cover; refrigerate until ready to serve.
To make garlic-pepper pork, coat each slice pork in remaining 2 teaspoons oil. Press 2 teaspoons black pepper and garlic into surface of pork; sprinkle with additional salt. Grill 4 minutes on each side or until tender. Serve with salsa.
