Blueberry Shortcakes with White Chocolate Blueberry Cream

Ingredients
- Biscuits:
- 2 C flour
- 1/2 tsp salt
- 1 T baking powder
- 4 T sugar, divided
- 1/4 lb butter, cold and cut in small pieces
- 1 C fresh blueberries
- 1 egg
- 1/2 C whipping cream or 1/2 & 1/2
- 1 egg white, lightly beaten to brushing
- Filling:
- 6 oz white chocolate
- 1 C whipping cream
- 1/2 C light sour cream
- 1 C fresh blueberries

Step 1
Biscuits: Combine dry ingredients; cut in butter; stir in blueberries. In small bowl combine egg and cream. Stir into flour mixture just until moistened and forms a dough. Place on floured surface; knead several times. Pat into a 7x1 inch round. Cut into 6 wedges. Brush tops with egg white. Sprinkle with 1 T sugar. Transfer to greased baking sheet. Bake in upper third of 400F oven for 15 minutes. Remove to rack to cool slightly. (can bake ahead and warm slightly in oven before serving)
Meanwhile, make filling. Heat chocolate and 1/4 C cream until melted. Cool to room temperature. Whip remaining cream. Add sour cream and whip. Gently mix in chocolate them most of blueberries, reserving for garnish.
Cut warm biscuits in 1/2; spread with cream mixture. Cover with top 1/2 of biscuit and spoon cream across centre. Garnish with berries.
