Potato Corn Chowder

Ingredients
- 1 tbsp oil
- 2 slices bacon - diced
- 1 medium onion - diced
- 1 small stalk celery - diced
- 1 large potato - diced
- 1 1/2 cups chicken broth
- 1 - 14 oz can (398 ml) cream corn
- 1 1/2 cups (375 ml) kernel corn
- 1 can (385 ml) evaporated milk (or a small can of evaporated milk with regular milk added to equal 385 ml)
- Salt, pepper and nutmeg

Preparation
Step 1
In a large pot, fry bacon. Remove bacon from the pot when cooked and drain the fat. Saute onions and celery in oil until onions are translucent. Add potato, bacon and broth. Cover and simmer for 15 minutes. Add corn and simmer for 3 minutes. Stir in milk and reheat but do not boil. Season with salt, pepper and nutmeg.
