Ingredients

  • 1 can pinto beans
  • 3 cloves minced garlic
  • 1 tsp oregano
  • 1 tbsp salt
  • 1 tbsp cumin
  • 1 tbsp garlic salt
  • 1 28-oz. can of tomatoes
  • 1 4-oz. can chopped green chilies, drained
  • 3 pound pork loin roast
  • 1 14-ounce bag tortilla chips
  • 1 cup sour cream
  • 1/2 pound grated cheddar cheese
  • 1/2 head shredded iceberg lettuce
  • 2 medium tomatoes, chopped
  • 10 green onions, chopped
  • 1 avocado, diced
  • 1 4-oz. can sliced black olives

Preparation

Step 1



Put first 8 ingredients into large pot, cover with water (just) and simmer covered for 2 hours. Add pork and simmer for 6 more hours, covered. Remove the pork, allow to cool, then remove all bones and shred the meat. Return pork to mixture and return to heat, simmering to reduce liquid and thicken (do not cover). Simmer for about 15 minutes. Serve meat on tortillas and allow guests to dress with condiments as they choose.
