APPLE PECAN BUNDT CAKE WITH CARAMEL SAUCE

Ingredients
- CAKE:
- 3/4 cup softened butter
- 1 1/2 cups sugar
- 2 tsp vanilla
- 3 eggs
- 1 cup sour cream
- 1/4 cup milk
- 3 cups flour
- 1 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 3 Golden Delicious Apples - peeled, cored and grated
- 1 cup chopped pecans
- CARAMEL SAUCE:
- 1/2 cup butter
- 2/3 cup sugar
- 2 tsp lemon juice
- 5 tbsp. whipping cream

Step 1
CAKE:
Combine butter and sugar till fluffy. Add vanilla and eggs, one at a time. Beat in sour cream and milk.
Combine dry ingredients. Add to butter mixture till moist. Then add 3/4 cup pecans and apples.
Bake at 325 in large bundt pan for 60 minutes.
CARAMEL SAUCE:
Cook butter sugar and lemon juice till butter is melted. Cook without stirring on medium heat without stirring until amber in color Remove from heat. Add whipping cream - being careful to keep away from face. Return to heat and cook till thickened. Cool to lukewarm.
Pour 1/2 the sauce over the cake and sprinkle with remaining pecans. Serve with additional caramel sauce.
