Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, chilled and in small pieces
  • 3/4 cup lowfat buttermilk
  • 1 egg
  • 1/4 cup fresh chives

Preparation

Step 1

1. Heat oven to 400.

2. Combine flour-salt, cut in butter until mixture resembles coarse meal.

3. Combine buttermilk and egg, add chives. Add to flour, stir just until moist.

4. Turn out onto floured surface, knead lightly 5 times. Roll out to 1/2" thickness. Cut out into 2" rounds. Place on a baking sheet, 1" apart.

5. Bake 12 mins or until golden.

Notes: used scallion instead of chives, used a bit less butter than called for and upped the buttermilk, added some parmesan on top. Would most likely have been better without the subs and may be worth trying again.
