Chicken Marsala

Ingredients
- 1 1/2 c. sliced mushrooms
- 4 boneless skinless chicken breast
- 2 T sliced green onions
- 2 T water
- 1/4 t. salt
- 1/4 c. marsala or dry sherry

Step 1
Place chicken between plastic wrap. Working from the center to the edges pound lightly with a meat mallet to about 1/4 inch thickness. Remove plastic wrap. Repeat with other chicken breast. Spray a large skillet with cooking spray. Preheat skillet over medium heat. Add 2 chicken breast and over medium heat for 2 to 3 minutes until tender and no pink remains. Transfer to platter and keep warm. Repeat with remain chicken. Add mushrooms, green onions, water and salt to skillet. Cook over medium heat unil mushrooms are tender and most of the liquid has evaporated (about 3 minutes). Add marsala or dry sherry to skillet. Heat throughly spoon vegtables and sauce over chicken.
