Ingredients

  • 1 tbsp. olive oil
  • 1 tbsp. Dijon-style mustard
  • 3 lb. rump roast
  • 2 tbsp. chopped fresh parsley
  • 1 tbsp. chopped fresh chives
  • 1 tbsp. dried tarragon
  • 1 tbsp. black peppercorns, coarsely crushed

Preparation

Step 1

Preheat oven to 375°F. In a small bowl, combine the olive oil and mustard, then spread mixture over the outside of the beef.


Combine the parsley, chives, tarragon and peppercorns on a plate. Roll the beef in herb mixture to coat. Transfer the coated beef to a large roasting pan.


Roast the beef until an instant-read meat thermometer inserted in the center of the beef registers 170°F, about 1 hour 20 minutes. Cover beef with aluminum foil and let rest for 10 minutes. Carve roast into thick slices to serve.

In Step 1, coat the beef with 1 crushed garlic clove combined with 1–2 tbsp. creamed horseradish in place of the
Dijon-style mustard.
