Ingredients
- 11/2 lbs (750 grams) ground beef
- 1 large onion
- 3 carrots, peeled and chopped
- 2 celery stocks, peeled and chopped
- 1 red pepper, chopped
- 2 garlic cloves, mashed
- 1 - 28 oz (796 mL) can of diced tomatoes
- 6 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp freshly ground pepper
- 1 tsp salt
- 1/3 cup pearl barley

Step 1
In a large heavy pot cook the beef over medium heat, breaking it up with a spoon, until no longer pink.
Add onion, carrots, celery and red pepper. Cook 5 - 7 minutes or until vegetables are soft.
Added mashed garlic and cook 1 minute more.
Add diced tomatoes, broth, oregano, basil, pepper, salt and barley.
Bring to a boil and simmer.
Cook until the barley is tender - 30 - 40 minutes.
* taste for seasoning and add more salt if necessary. If you like thinner soup add some more broth.
