Ingredients
- 2 T olive oil, plus extra for brushing
- 1 quantity pizza dough
- All purpose flour, for dusting
- 6 tomatoes, thinly sliced
- 6 oz mozzarella cheese, drained and thinly sliced
- 2 T shredded fresh basil leaves
- Salt and pepper

Preparation
Step 1
Preheat the oven to 450. Brush a cookie sheet with oil.
Roll out the dough on a lightly floured counter to a 10" round. Place on the cookie sheet and push up the edge a little. Cover and let stand in a warm place for 10 minutes.
Arrange the tomato and mozzarella slices alternately over the pizza base. Season to taste with salt and pepper, sprinkle with he basil and drizzle with the olive oil.
Bake in the oven for 15-20 minutes, until the crust is crisp and the cheese has melted.
