Ingredients
- SEASONING:
- 2 lbs Beef Tenderloin Roast - center cut
- 1 tsp Dried Oregano leaves - crushed
- 1 tsp Dried Thyme Leaves - crushed
- 1 tsp Salt
- 1 tsp Sweet Paprika
- 1/2 tsp Garlic Powder
- 1/2 tsp Grnd. Black Pepper
- 1/4 tsp Grnd. Red Pepper
- 1/4 tsp Grnd. White Pepper

Step 1
1.) Heat over to 425°. In a small bowl, combine seasoning ingredients. Press evenly into surface of Beef Roast.
2.) Place Roast on rack in shallow roasting pan. Insert oven-proof meat thermometer so tip is centered in the thickest part of the beef. Do not add H2O or cover. Roast in 425° oven for 35 to 40 minutes for medium rare doneness. Remove roast when meet thermometer registers 135°. Transfer Roast to carving board; tent loosely with aluminum foil. Let stand 15 minutes. (Temperature will continue to rise ~ 10° to reach 145° for medium rare.)
3.) Carve Roast into 1/2" thick slices.
