Ingredients

  • 2 cups unbleached flour
  • 1/4 tsp salt
  • 1 stick butter, at room temp
  • 1 cup confectioners sugar
  • 1 egg
  • 1/2 tsp peppermint extract
  • 1/2 tsp vanilla extract
  • 8 oz white chocolate, melted with 1 tsp shortening
  • 1/2 cup finely chopped candy canes

Preparation

Step 1

Stir together flour and salt in medium-sized bowl. Set aside. Beat butter and sugar in large bowl until smooth and creamy. Beat in egg. Beat in extracts. On low speed, beat in flour mixture. Shape dough into a ball; wrap in plastic wrap. Refrigerate 1 hour.

Heat oven to 375. Shape dough into 1" balls for a total of 36 cookies; place on parchment lined baking sheets. Bake 10-12 minutes or til bottoms are lightly browned. Transfer to wire racks.

When cool, bruch with melted white chocolate; dip in chopped candy canes. Let harden on waxed paper.
