Ingredients

  • 1 1/2 lb. ground turkey
  • 1 t. chili powder
  • 1 t. cumin
  • 1 t. garlic powder
  • Salt and pepper to taste
  • 1/3 cup corn, drained
  • 1 medium onion, chopped
  • 1/4 cup soft whole-wheat bread crumbs
  • 2 eggs, slightly beaten
  • 1/2 cup red pepper, chopped
  • 1/2 cup barbecue sauce
  • Salsa

Step 1

Preheat oven to 375 degrees F.

Place turkey in a large mixing bowl. Add spices and salt and pepper, and combine. Add corn, onion, bread crumbs, eggs, bell pepper and barbecue sauce, mixing lightly but thoroughly, using clean hands. Shape turkey mixture into big blobby blimp and place on a baking sheet (with sides). Bake for 1 hours or until cooked through. Cut loaf into slices and serve with warmed salsa.

Or, for less cooking time (at the same oven temperature), use a muffin tim. Lightly grease the muffin cups and fill to the brims with mixture. Bake for about 35 minutes or until cooked through.
