Ingredients

• Toppings :
• Chicken Tenders 1 pkg
• Dark mild enchilada sauce 1 can
• garlic cloves 3
• chicken broth - low sodium 2 boxes
• sweet corn - frozen 1 bag
• black beans 2 cans
• medium chunky salsa 1 C
• lemon juice 1/4 C
• lime juice 1/4 C
• diced tomatoes 1 large can
• chili powder 1 tsp
• cumin 1 tsp
• olive oil 1/4 C
• finely chopped red onion
• fresh cilantro
• tortilla chips
• shredded cheese
• avocado
• sour cream
• white rice

Preparation

Step 1

cook chicken in toaster oven
vitamix chicken until lightly shredded
all all ingredients to large stock pot
simmer 20 min
have toppings ready for individuals
