Ingredients
- 2 tbsp. butter
- 1 large onion chopped
- 1 large garlic minced
- 2 celery stalks chopped
- small red pepper chopped
- 1 tbsp. lime juice
- 2 tbsp. tomato paste
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/8 tsp cayenne pepper
- 3 cups chicken broth
- 1 can diced tomatoes
- 2 grilled cheese sandwhiches

Preparation
Step 1
1. Melt butter in saucepan over medium. Add garlic and onion. Cook until onion is soft, 4-5 mins
2. Add carrots, celery, pepper, tomatoe paste, lime juice, sugar, salt & cayenne. Cook until vegetables begin to soften.
3. Add broth, diced tomatoes & juices. Bring to a boil. Reduce heat to low and simmer for 20 mins.
4. Puree until smooth.
5. Cut up grilled cheese and top soup with grilled cheese.
