Red Onion & Parmesan Tartlets

These simple tartlets make a stuning starter. If you want to prepare them ahead, make the custard and cut out the pastry rounds in advance. then assemble and back the tartlets just before you want to serve them.

- 1/4 cup milk
- 1/4 cup cream
- 2 garlic cloves, peeled and halved
- 2 red onions, cut into 6 to 8 wedges each
- or 1 red onion halved and sliced very thin. You can sautee and save for topping.
- 1 egg yolk
- 1/2 tbsp. all-purpose flour
- 1/3 cup freshly grated Parmesan cheese
- 9 oz puff pastry
- 1 0z onion garlic jam

Preheat the oven to 375 F. Grease a baking sheet, or use silpat.
In a small saucepan, bring the milk, cream and and garlic to a boil. Remove from the heat and let stand for about 15 minutes. Remove and discard the garlic. Wish the egg yolk and flower into a smooth paste. Bring the mild and cream back to simmering, then gradually pour it into the flour mixture, whisking constantly until smooth. Return the mixture to the pan and heat gently for 4 to 5 minutes, stirring, until creamy.
Remove from the heat, stir in the cheese and season to taste.
Roll out the pastry and cut out 4 larger or 8 smaller rounds about 2 1/2 inch round. Lay the pastry on a baking sheet and spread the cheese custard over them, leaving 1/4 " border around the edge.
Take a pea sized amount of the onion garlic jam and drop it on top of the custard mixture.
Arrange three onion wedges on each tart or add pre cooked onion pieces on top of each tart.
Bake tarts for 15 to 20 minutes, until the pastry ins crisp and golden. Serve hot, warm, or at room temperature.
