- 1-1/2 lbs ground sausage or breakfast sausage
- 1 cup diced onion
- 1/3 cup flour
- 3-1/2 to 4 cups milk
- 1 tsp dried thyme
- 1 tsp pepper
- 3/4 tsp salt
- Biscuit Topping:
- 2-3/4 cups biscuit mix
- 1 cup buttermilk
- 1-1/2 tsp chopped fresh chives
- 2–3 Tbsp butter, melted

Preheat oven to 425°F.
To make the sausage gravy, brown the ground sausage, and onion in a large sauté pan until fully cooked. Use a spoon or spatula to break the sausage into small pieces. Sprinkle the flour over the sausage mixture, stirring to coat evenly. Add the milk, stirring frequently, until it begins to simmer, then add the thyme, pepper, and salt. Simmer for 3–5 minutes, until the sauce begins to thicken. Transfer the mixture to a 13" x 9" casserole dish.
To make the biscuit topping, combine the biscuit mix, buttermilk, and chives in a medium mixing bowl. Mix with a fork until just combined, being careful not to overmix. Using a spoon (or your hands), dollop spoonfuls of the biscuit mixture over top of the sausage gravy. Bake for 25–30 minutes. Before the final 10 minutes of cooking, remove the casserole dish from the oven, brush the biscuit topping with the melted butter, then put it back in the oven to finish cooking.
