BANANA BREAD

Ingredients
- 1 C. shortening
- 2 C. sugar
- 4 eggs
- 2 C. mashed bananas (3-4)
- 2 t. baking soda
- 2 t. vanilla
- 1/2 C. sour milk (mix 2t. vinegar w/milk) or use buttermilk
- 3 C. flour
- 1 C. walnuts or pecans (optional)

Preparation
Step 1
Cream the shortening and sugar together and then add the eggs and beat until creamy. Add the mashed bananas, vanilla, and milk and mix thoroughly. Mix in the baking soda and flour. Mix well. Fold in the nuts. Pour the batter into two greased and floured loaf pans or 1 bundt pan. Bake at 325 degrees for 1 to 1 1/4 hours until a tooth pick inserted into the middle of a loaf comes out clean. Check to make sure the top of the bread is not browning too much. If it is, cover with aluminum foil shiny side up for the last 15 minutes of baking.
Makes two loaves or one bundt pan.
