Ingredients

  • 2 sticks (16 tablespoons) (226g) Unsalted Butter
  • 1 3/4 cup (405ml) Brewed strong Coffee
  • 1/4 cup (60ml) Bourbon
  • 1 cup (5ounces) (168g) Semi Sweet Chocolate
  • 2 cups (400g )Granulated Sugar
  • 2 cups (260g) All Purpose Flour
  • 1/4 cup (23g) Cocoa Powder
  • 1 1/2 teaspoons (7g) Baking Soda
  • 1/2 teaspoon Salt
  • 2 (100g) Large Eggs
  • 1 Tablespoon Vanilla Extract

Preparation

Step 1

1.Melt the chocolate and the butter together in the microwave or over a double boiler.

2.In a large mixing bowl combine the Bourbon, eggs, sugar and vanilla extract together and whisk to combine well.

3.Add the chocolate/butter mixture and whisk smooth.

4.Sift the dry ingredients together and then add to the chocolate batter and whisk well to combine.

5.Pour the batter into the prepared pan(s) filling each one half to 3/4 of the way to the top.

6.Bake immediately in preheated oven at 375 degrees F Until Its Done.

7.Cool until you are able to touch the pans (not piping hot!) and then turn out onto a parchment lined sheet pan to cool the rest of the way.

Yield 12 baby bundts or 1 standard sized bundt cake.
