Ingredients
- 2 cups all purpose flour
- 2/3 cup toasted unsweetened coconut
- 2/3 cup chopped macadamia nuts
- 3 tbs packed maple sugar or light brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cardamom
- 1/4 tsp salt
- 3 large eggs, separated
- 2 cups coconut milk
- 4 tbs unsalted butter, melted

Preparation
Step 1
In one bowl mix the dry ingredients, in another beat egg whites until glossy peaks form, in another mix the wet ingredients. Mix the wet into the dry and fold in egg whites. Cook until golden.
Serve topped with a mixture of diced tropical fruits or Candied Ginger, Mango, and Lime Spread.
