Stuffed Chicken, Mozzarella

  • Chicken Breasts, skinless and boneless

  • Mozzarella cheese, whole

  • Mayonnaise

  • Garlic salt

  • Paprika

  • Italian Style Bread crumbs

  • Black Pepper


Cut a pocket into each breast, by slicing in half, but not all the way through. Slice up your mozzarella cheese, about 1/2 inch thick slices. Place 1 slice of the cheese into each chicken pocket and fold over, place in baking pan. Slather generously with mayonnaise. All over the top and the sides. Season with garlic salt, and freshly ground black pepper. Top with a good coating of Italian style bread crumbs. Then with some paprika. Bake in a 350 oven for 45 minutes. Turn on broiler for last couple of minutes to crisp up the topping.
