Ingredients

  • 1 T. butter
  • 1 T. olive oil
  • 3 cloves garlic, pressed
  • 1 lb. large raw shrimp, peeled and deveined
  • 1 tomato, diced
  • 1/4 cup white wine (or white grape juice with a splash of vinegar)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1/4 cup parsley, finely chopped

Preparation

Step 1

In a skillet, heat butter and olive oil together over medium-high heat. Add the garlic, saute for 1 minute, then add the shrimp and tomato. The sauce will reduce and shrimp will turn pink -- it happens very quickly. Don no overcook or the shrimp will be rubbery. Sprinkle with parsley before serving.
