Ingredients

  • 1 bag of thawed and well drained chopped spinach
  • 2 egg whites
  • 1 whole egg
  • 1/4 c diced onion
  • 1/2 c shredded cheese
  • 1/2 c bread crumbs
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp garlic powder

Step 1

I promised something a bit more “booty-friendly” and here it is! These are high in protein, low in carbs and absolutely delicious. Now, if you’re not fond of green things.. stick around. I have something pink and fluffy later.

Mix well in a bowl like this:

Heat a non stick skillet over med-high. Spray with a bit of cooking spray.

Fantastic. Increased the onion factor. Added a little feta to my shredded cheddar…and minced garlic. Olive oil instead of spray. Om nom nom.

I have used the boxed frozen spinach, just make sure to squeeze out the extra water, it should make 8 burgers!

I love this recipe so much. I make a big batch and keep it in my fridge for quick meals. I’m a grad student, and after a long day of work, class, and studies, it’s great to have something delicious, healthy, filling, hot, and easy. Thank you for sharing it!

I want to make these tonight – going to have to try it with fresh Spinach though since that’s what I’ve got a TON of in my kitchen

just curious what some who have made these ended up putting them on? Did you put them in a bun or did you use a pita bread? did you add any other toppings on top or just the spinach burger itself?

Could you make these without cheese? With onion or something instead? or is the cheese needed to keep them from falling apart?

I found this recipe via pinterest and being newly vegetarian couldn’t wait to give them a try. We took out the onions (hubby won’t eat them) and added 5 cloves of fresh roasted garlic. SOOOOOO GOOOOOOOOOD!

How many average sized burgers will this make? Only 3 of us in our family, so wonder if I should halve the recipe? Sounds incredibly delicious!

Just made these for dinner! Love this! Super easy for my Monday night dinner for one (make about 1/2 recipe). I only had feta and mozzarella cheese and it worked very well. Put on a whole wheat bun with “special sauce” (mayo + dijon mustard). Thanks for the recipe! Pinned this on Pinterest!

I made a few changes: I also added a bit of cream cheese, used spring onions instead of onion and put a squeeze of lime in there. I also just used 3 eggs so as not to waste any.

Next time I will use gram flour instead of breadcrumbs to make it even healthier, and maybe add peas and mint. I really recommend!

These were amazing!! I needed to use up a bunch of fresh spinach that was about to go bad and this was the perfect solution! Next time, I’m thinking about adding some diced mushrooms…I didn’t realize how versatile they would be when I started making them, but now I can’t stop thinking of options!

Were they too moist? Perhaps add some extra bread crumbs. If they were too dry, add one more egg white. That should work!

They’re so easy to make and they stay together really well while cooking.

DELICIOUS! Just tried it. I added black beans to the burger mix and I served it on a roll with avacodo, tomato and super fruit balsamic dressing with a side of sweet potato chips!!!

Sauteing it first would be beat!

Is there anything healthier you would suggest to use in place of bread crumbs?

These look great. I am going to try these with swiss chard. As a response to Jenna’s post, you could probably substitute chick pea flower for the bread crumbs to make them healthier. Though, it is not a 1:1 ratio.

These are great! I added a little plain Greek yogurt because I didn’t have enough eggs.

I substituted cooked quinoa for the breadcrumbs and a bit of lowfat plain yogurt for the cheese to make these even more healthy. These are delicious!!

Use pork rinds to make the carbs practically nothing. Any variation of spices works great.

As a huge veggie eater, I knew I’d love these burgers and I absolutely do! I think next time I’ll add a half packet of italian dressing mix for even more flavor. Super easy to make and just plain GOOD!

I’ve been making these for years and we love them!! I do it a little different. I use Stove top stuffing for extra flavor instead of bread crumbs and I don’t use cheddar cheese, feta cheese is amazing in these!! I also stir in some chopped pimento and sliced mushrooms… We eat them without the bun… When I was doing Weight Watchers, I had down that each small pattie was 2 points.

I just made these tonight and loved them! I also added feta and did not use any red pepper. Next time I will use WAY less salt if any at all and I would like to add some mushrooms. Mmmm def a good recipe!

I made these today while my 13 month old napped. So yummy! When she woke up I reheated them in the toaster oven and she ate THREE!

I’ve made these twice now, both times delish! I am making again tonight for a crowd, and going to add some ground spicy sausage to the mix for the meat eaters. Otherwise, my veggie method is to add finely chopped mushrooms and roasted red peppers, the rest is as-is on the recipe. They are scrumptious!! I’m thinking in a pita with tzatziki (spelling?) sauce would be great, or with a dollop of goat cheese on top, or…………….. well, anything! They are awesome!

These are great! I just made them for lunch–I didn’t have red pepper flakes so I used a couple of shakes of hot sauce. Thanks for the recipe!

Could i use something else to sub the bread crumbs?? My family is grain-free…so i couldn’t use anything with flours or wheats in it…even if it was gluten free.

Lauren, Could you use rice? I have seen rice bread crumbs… another reader used crushed pork rinds to replace the crumbs. Perhaps a cornmeal even? Hope that helps.

Wow!! Made these tonight and they were amazing. Added some fresh garlic and chopped some cilantro. It was so good.

Made these last night! They were delicious! I added 1 tbs Chia seeds to add protein. Used Fresh spinach, just cooked the onion and spinach ahead to mix in.

These spinach patties were amazing and so easy to make. I made a double batch which yielded 6 patties. I froze a couple of patties to see how they would hold up. They were just as good. I just let them thaw and then warmed them in the microwave. I prepared my burger just like I would with hamburger except I used those thin buns. They were so yummy and I didn’t even miss the meat. I estimated that each patty was about 138 calories. Not bad.

This sounds so tasty. ..Do you have a eggbeater version? Can these be prepared in oven or cooked via grill pan?

Fabulous recipe. I can see doing all kinds of variations! The only thing that I would do different next time is to use a little less salt and red pepper flakes. I’ll definitely do them again and maybe with mushrooms like someone else mentioned.
