Ingredients
- SAUCE :
- 2# ground beef (lean)
- 2- small cans tomato paste
- 1- 14 oz can tomato sauce
- 1 small onion, chopped fine
- 1 pod garlic, 4 or 5 cloves
- Mushrooms (optional)
- Salt & pepper
- MANICOTTI FILLING:
- 1 carton small curd cottage cheese, drained
- 2 small cartons ricotta cheese
- 2 eggs
- 2 cups mozzarella cheese
- 1/2 cup parmesan cheese
- 1/4 cup parsley (dehydrated) with salt & pepper added
- CREPES:
- 1 cup flour
- 1 1/2 cup milk
- 2 eggs
- 1 tbsp oil
- 1/4 tsp salt

Preparation
Step 1
SAUCE:
1) Brown ground beef with onion, garlic, salt & pepper
2) Stir in tomato paste, then sauce & paste, add a little water & cook down
MANICOTTI FILLING:
1) Mix cottage cheese, ricotta, mozzerella, parmesan, eggs, parsley, salt & pepper in bowl
CREPES:
1) Combine & beat until smooth
2) Let set at least 1 hour (batter is thin)
3) Rub crepe skillet with oiled paper towel (do not have to oil each crepe)
4) Medium High heat
5) Pour in crepe mixture, tilt and turn pan to cover the bottom.
6) Crepe is done when edge is done & top is dry to touch
7) Put on wax paper, stack with wax paper between crepes
ASSEMBLY:
1) Fill crepe with filling, not too much or will be dry
2) Roll crepe into baking pan
3) Pour meat sauce over
4) Sprinkle with cheese
5) Bake like lasagna( around 350 for 45 min or until done)
Makes about: 2 dishes (13 x 9 x 2 pans)
