Ingredients
- 1/2 cup red bell pepper
- 1/2 cup yellow bell pepper
- 2 cloves garlic
- 3/4 cup red onion
- 1/4 teaspoon crushed red pepper
- Salt and pepper to taste
- 1 1/2 Tablespoons tomato paste
- 1 TB each basil and parsley
- 1 1/2 to 2 pounds of lean ground beef
- 1 large egg
- 1/2 cup bread crumbs
- 1/2 cup grated parmesan cheese
- 1 Tablespoon Worcestershire sauce

Preparation
Step 1
½ cup red bell pepper
½ cup yellow bell pepper
2 cloves garlic
¾ cup red onion
¼ teaspoon crushed red pepper
Salt and pepper to taste
Sauté the above with olive oil about 10 minutes or until veggies are soft.
Add 1 ½ Tablespoons tomato paste
Remove from heat and allow to cool.
Add 1 TB each basil and parsley (I prefer fresh herbs but dried are fine)
Once the veggies are cooled, add to 1 ½ to 2 pounds of lean ground beef (we use 93% fat free)
1 large egg
½ cup bread crumbs
½ cup grated parmesan cheese
1 Tablespoon Worcestershire sauce
Place into a meatloaf pan. Top with marinara sauce. Cook at 425 degrees for 1 hour.
