Ingredients
- 15 oz. can pumpkin puree
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 2 eggs
- 1 tsp. vanilla
- 5 oz. can evaporated milk
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 2 tsp. pumpkin pie spice
- 2/3 cup flour

Step 1
Preheat oven to 350*
Line a cupcake pan with cupcake liners. In a large mixing bowl, combine pumpkin, sugars, eggs, vanilla and evaporated milk.
Mix in flour, pumpkin pie spice, baking soda, baking powder and salt.
Fill your liners about 1/2 full. Bake 20 minutes and let cool. Transfer to the fridge for about 30 minutes. Put a star tip on a decorator and fill with cool whip. Once they are completely cool frost with the cool whip.
