Italian Style Chicken and Peppers

Unbelievably easy and a real crowd-pleaser. You can double or triple the recipe easily.

Ingredients
- 2 cups meatless pasta sauce (I used Ragu's light sauce)
- 2 tsp. olive oil
- 1 medium green pepper, finely chopped
- 4 oz. cream cheese, softenend
- 4 boneless chicken breast halves (4 oz. each although I used bigger ones and just cooked them longer)
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 4 slices part-skim mozzarella cheese (I used grated, and covered the chicken with it--don't know exactly how much I used)

Step 1
Preheat oven to 425. Place pasta sauce in a microwave-safe bowl; microwave, covered, on high for 3-4 minutes or until hot, stirring halfway through.
Meanwhile, in a large skillet, heat oil over medium high heat. Add green pepper; cook and stir 3-4 minutes or until tender. Transfer to a small bowl; stir in cream cheese.
Arrange chicken in a greased 13 x 9 baking dish; sprinkle with salt and pepper. Spoon green pepper mixture onto the chicken. Pour warmed sauce over top. Put cheese on top of sauce. Bake, covered, 132-30 minutes (more for bigger pieces) or until a thermometer inserted into chicken reads 165.
