Ingredients

  • 1 1/4 cups AP flour
  • 1/2t table salt
  • 1T sugar
  • 6T unsalted butter, cut into small pieces
  • 1/4 cup chilled solid vegetable shortening, cut into pieces
  • 1/4 cup vodka, cold
  • 1/4 cup ice water

Preparation

Step 1

1. Combine flour, sugar, and salt in medium bowl. Add butter and shortening. Combine ingredients using pasty blender until butter and shortening are pea-sized. (I use a food processor)
2. Combine vodka and water. Sprinkle half of water/vodka over flour mixture. Toss well, being careful not to over-handle. Add remaining water/vodka 1-2 TBS at a time, toss mixture gently to combine.
3. Form dough into disk, wrap in plastic and refrigerate for at least 30" and up to 10 hours
4. When ready to roll, place on floured surface and roll out dough to fit 9" pie plate. Cover pie crust w/ plastic wrap and freeze for at least 30" before baking.
