Ingredients

  • Cupcakes:
  • 1/4 cup lime juice
  • 1 1/2 tsp lime zest
  • 1 cup milk
  • 1/4 cup grape seed oil
  • 2 Tbsp tequila
  • 1/2 tsp vanilla
  • 3/4 cup granulated sugar
  • 1 1/3 cups all purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Icing:
  • 1/4 cup butter
  • 1 Tbsp milk
  • 3 Tbsp lime juice
  • 1 Tbsp tequila
  • 2-2 1/2 cups confectioner's sugar

Step 1

Cupcakes:
Preheat oven to 350 degrees. Line a muffin tray with cupcake liners.

In a large bowl, beat together the lime juice, lime zest, milk, oil, tequila, vanilla and sugar until well combined.
In another bowl, whisk together the flour, baking soda, baking powder and salt. Add the dry to the wet ingredients and mix until well incorporated.

Fill muffin tins 3/4 full and bake for 20-22 minutes or until toothpick comes out clean. Cool on rack. Once cool enough to touch turn cupcakes out of pan to cool.

Frosting: In a mixer, beat together the butter, milk, lime juice and tequila until mixed well. Add the sugar, mix on low to incorporate and then on high until frosting is light and fluffy.
Garnish with lime zest and a slice of lime
