Black Bean Chili

Ingredients
- 4 cups dried black beans
- 1 tablespoon olive oil
- 6 cloves garlic, minced
- 2 teaspoons cumin
- 2 1/4 teaspoons salt
- pepper
- 2 teaspoons basil
- 1/2 teaspoon oregano
- crushed red pepper
- 1 tablespoon lime juice
- 2 green bell peppers, chopped
- 2 chili peppers, minced (I use jalapenos, Mollie recommends Anaheims or poblanos)
- 1/2 cup tomato puree

Preparation
Step 1
1. Soak beans in plenty of water several hours or overnight.
2. Drain liquid and cook in fresh boiling water, partly covered, until tender, about 60-90 mins. Add more water as needed. Transfer cooked beans to another pot with 2-3 cups of cooking liquid.
3. Saute garlic, seasonings, lime juice, peppers, and chilies in oil until peppers and chilies are tender, about 10-15 mins.
4. Add to beans with tomato puree. Simmer, covered, over low heat, 20 mins, stirring occasionally. Garnish with cheese, sour cream, scallions, salsa, etc.
