Ingredients
- 2 slices bacon
- 4 squab or cornish game hens
- 6 tablespoons butter
- 3 scallions, minced
- 3 shallots, minced
- 1/4 pound mushrooms, minced
- Salt and Pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried basil
- 2 teaspoons minced parsley
- 1/2 cup dry white wine
- 3/4 cup beef broth

Step 1
Fry bacon until crisp in a casserole. Remove bacon and discard. Brown birds in bacon fat, breasts down. Turn the birds; add 2 tablespoons butter, the scallions, shallots, and mushrooms. sprinkle with salt and pepper and cook 5 minutes each remaining side. Add the herbs, white wine, and broth. Simmer for 5 minutes. Cover and bake in a preheated 350 degree oven for 40 minutes
