Prepare the cake according to package directions and bake it in a 9x13 inch pan. Cover the cake with a dish towel and allow to cool completely. Can bake the cake the night before and leave it covered on the counter until ready to prepare the balls. Gently crumble the cake 1/4 of the cake at a time. Can use 2 forks to gradually pull the cake apart until the cake is in very fine cake crumbs. The standard recipe calls for a whole container of icing, but you can using only 3/4 of the container. If you use the whole container the cake balls will be extremely moist and may be slightly on the mushy side. Which is good if you like moist. Using two forks work the icing into the cake. Gentally until the icing is no longer visible. Roll the mixture into balls, about walnut size. If you have a small cookie dough scoop, it makes it really nice. This is important: Put them in the freezer, uncovered for at least an hour. You'll want the cake balls to be very firm before coating them. Melt the chocolate for coating, stirring occasionally until the chocolate is melted and smooth. You can thin the chocolate with a little vegetable shortening if you want the balls to coat more uniformly. You can add food coloring to plain white chocolate, but gel or powdered food coloring works best. It helps for the cake balls to be very fozen and firm; decreases the likelihood of crumbs falling into the melted candy coating.
Gently drop the ball into the bowl to coat the underside, then gently lift the cake ball out of the candy with a fork. With a spoon, drip candy all over the top, thoroughly coating the ball. The fork allows the candy to drip back into the bowl. Gently transfer the coated cake ball onto parchment or waxed paper. You can pipe a contrasting color of candy over the top for an additional artistic flair. You can also get lollipop sticks from a hobby store. Insert a stick sideways into each ball. You'll notice there is a flattened area that resulted from the cake balls cooling on the pan. Roll the ball in the candy or spoon in over the top. Be sure to thoroughly coate the bottom of the ball where it meets the stick. Lay them down onto the waxed paper, paying attention to the flat part, put it against the paper.
