Colin Cowie's Honey Vinaigrette

Serve on hearty winter greens like escarole, or use dressing as a glaze for poultry while it cooks on the grill.

Ingredients

• 1/4 c white wine vinegar
• 1 T Dijon mustard
• 1 T chopped shallots
• 1/4 t salt
• 1/4 t freshly ground black pepper
• 1 c EVOO
• 2 t honey
