Ingredients
- 1 1/2 pounds russet potatoes
- 1/2 tsp salt
- 2 large eggs
- 1 small onion, grated
- 3 tbs minced fresh chives
- 3 tbs all purpose flour
- 2 large cloves garlic, minced

Preparation
Step 1
Peel and grate the potatoes. Place in colander and toss with salt. Let stand 10 minutes, then squeeze out moisture. In a large bowl, beat the eggs and stir in the potatoes and the rest of the ingredients.
For each pancake, place 1 heaping tablespoon of the batter on the pan and press down lightly. Cook until golden. Serve with sour cream and applesauce.
