Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup whole wheat pastry flour
  • 1/3 cup packed light brown sugar
  • 2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs, separated
  • 2 cups milk
  • 1/3 cup molasses
  • 5 tbs unsalted butter, melted, plus extra for greasing
  • 2 tbs fresh grated ginger
  • 1/2 cup chopped crystallized ginger

Preparation

Step 1

Combine flours, sugar, baking powder, ground ginger, cinnamon, cloves, baking soda, and salt. In a small deep bowl beat the egg whites until soft glossy peaks form. In another bowl, beat the egg yolks, milk, molasses, butter, and fresh ginger. Add the milk mixture to the dry ingredients and fold in the egg whites and crystallized ginger.

Heat griddle and grease lightly. Spoon about 1/4 cup for each pancake and cook. Serve topped with Sauteed Cinnamon Apple Slices, Honey Almond Butter, or Rum Hard Sauce.
